Fluffy Puppy Casserole

Okay, this is really a white trash meal if I've ever had one. I've seen it called many things. Hot dog potato casserole is another, very descriptive name for it. A friend of mine used the same basic idea by cutting hot dogs in half lengthwise, plopping some mashed potatoes on it, sprinkling some cheese on top and baking it. She called them Fluffy Puppies, so I made this a little simpler by making it a casserole. So I did about 6 cups of mashed potatoes, a package of hot dogs and mixed them together. Sprinkled some cheese on top and then sprinkled it with some seasoned salt. The verdict? Older kids liked it, younger kids...not so much. Nutritional value? Weeeeeeeell, so it's not really that loaded with anything except fat and calories. We probably won't make it again. But it was super fast and easy to make and since I did have a package of hot dogs to use up....(since all the buns got used for banana dogs!).

As Promised, "Dogzana"

This is a family favorite. It's basically cornbread--with hotdogs in it, laid out lasagna style, hence the name, dogzana (pronounced dog-zawn-ya). It's basically corndogs--without the deep frying and without the stick! It can be way easy if you use a cornbread mix, but I "healthify" mine a little bit by using whole grain cornmeal and flour.

Here's my cornbread recipe: (you're going to want to write this down!)
1/2 c. melted butter or margarine
1/2 c. sugar
2 eggs
1 c. buttermilk
1/2 t. soda
1 c. cornmeal
1 c. flour
1/2 tsp salt

Melt margarine and stir well with sugar. Add eggs and stir well. Combine and add buttermilk and soda (I don't ever have buttermilk, so I sour some milk with lemon juice, let sit for a few minutes, then add the soda, then let sit for a few minutes more). Add cornmeal, flour and salt and stir just until blended. Do not overstir!

Bake in a 9x13 pan at 375 for about 20 minutes. This makes a really thin cornbread that barely feeds my family of 8. But it bakes quickly and I like how crusty it gets when you bake it in a 9x13. If you prefer, you can use a smaller pan, just bake longer.

Okay, to make this into dogzana, pour it into the pan and line hot dogs up. Push them down into the batter so that the batter starts creeping up their sides. If you buy the bun length dogs, two dogs fit the length of the pan perfectly. I lined up 8 dogs, baked it for about 25 minutes to make sure the dogs were warmed through, added some ketchup, and voila! A meal!

Banana Dogs

This is a good one for the kiddos. Take a hot dog bun and smear it with peanut butter (we prefer chunky, but use what you've got!). Drizzle it with honey, then put a peeled banana in the bun. Nutritious and delicious! The judges give it two thumbs up!

Single Wide Cookbook starts today!!!!

Howdy folks,

We have laughed at what we feed our kids and what our parents have fed us as kids.
I remember a "casserole" my mom made that had Doritos in it. It was mmm good!!!
Pretty much anything with potato chips in it could qualify for this blog.

Les invented the exciting dish called "Dog-zan-ya". A nice golden brown cornbread with hot dogs strategically placed. Call it hot dog on a stick without the stick.

Kids love, I love it too.

We would love for you to submit your favorite "white trash" recipes. Once we get enough we are planning on binding it for those interested.

So think back to all the weird stuff your mom fed you as a kid or the stuff that you feed your kids and post away.
